Mexican 'huevos rancheros'! A dish made with eggs, red beans, spicy tomato sauce, avocados, and cream served on a crispy tortilla.

Ingredients:
For the sauce
- Tomato (s): 6 whole
- Fresh cilantro: 1 bunch (s)
- Onion (s): 1 whole
- Garlic clove (s): 1 whole
- Green pepper (s): 1 whole
- Fine salt: 4 pinch (s)
- Chorizo slice (s): 6 whole
For the rest of the recipe
- Egg (s): 4 whole
- Feta: 40 g
- Avocado (s): 1 piece (s)
- Canned red beans: 100 g
- Greek yogurt (s): 1 whole
- Corn tortilla: 4 whole
1. FOR THE SAUCE
Grate the tomatoes.
Peel and slice the onion, peel the garlic, remove the seeds from the pepper.
Wash and remove the leaves from the coriander.
Mix everything in a blender, add the salt.
Heat a drizzle of olive oil in a pan and pour the sauce. reduce slightly.
Heat the chorizo slices and add them to the sauce. Keep warm.
2. FOR THE TOPPING AND TORTILLAS
Heat the red beans in a drizzle of olive oil in a pan. Crush them roughly.
Peel the avocado and cut it into cubes.
Heat the tortillas in a pan with a drizzle of olive oil until golden brown. Reserve them.
Crumble the feta.
3. FOR THE EGGS
Cook the eggs one by one in a drizzle of olive oil.
Salt the pan before pouring the egg into it.
Reserve them.
4. FOR ASSEMBLY AND DRESSING
Spread little mashed beans on each tortilla.
Place an egg on it. Cover with tomato sauce and add a few diced avocado.
Sprinkle with crumbled feta and top with a spoonful of Greek yogurt.
Garnish with sprigs of coriander.
